Carol (Knapp) Hubbard, of Hyde Park, MA, passed away peacefully on November 24 at the age of 81. She was born in Montpelier, VT on March 5, 1939 and grew up in Windsor, VT. She graduated from Windsor High School in 1956. She was formerly married to the late Roger Hunt (of Hartland VT) and had three children. She is survived by her two devoted sons, Kenneth R Hunt of Hartland, VT and Harrison J Hunt of Braintree, MA and was predeceased by her beautiful daughter, Wendy (Hunt) Mitchell and her sister Barbara (Knapp) Baker.
She worked in several restaurants in the Boston area and owned her own restaurant, Carol’s Lunch Box, in Roslindale Square for many years. After selling her restaurant, she went on to being the Cook Supervisor for Milton Healthcare, where she retired in 2006.
Carol enjoyed playing cards, listening to music, eating great food and staying active.
At the family’s request, there will be no services.
